Lavender + Rosemary Infused Tequila Tonic
I used to be intimidated at the thought of making my own cocktails, but after I learned how to make herbal simple syrups, I realized that cocktails can be delightfully easy, aligned with the season, and delicious. This is the perfect summertime refresher and is just as yummy with tequila as with lemonade (the mocktail version!). ingredients
1/2 oz lavender rosemary infused syrup
1 1/2 oz tequila*
Juice of 1/4 lime
Sparkling water (for topping)
*mocktail version: 1 oz cold tea, 1 oz lemonade
For Serving:
Sprig of fresh rosemary
Serves 1
lavender rosemary infused syrup
1 cup sugar
1 cup water
2 tbsp dried lavender
4 sprigs of fresh rosemary
4 tea bags chamomile tea (or 2 tbsp loose leaf chamomile tea)
instructions
Begin by making the lavender rosemary infused syrup. Place all ingredients (except tea) in a small sauce pan.
Bring mixture to a boil and boil for 2 minutes, stirring frequently to dissolve sugar.
Remove from heat and add tea bags, or loose tea to the pot.
Let syrup steep for 30 minutes.
Strain syrup through a fine mesh sieve into a glass jar. Discard herbs. You can use your syrup immediately (I like to put mine in the fridge for an hour or so first), or place an air-tight lid on the jar and keep in the fridge up to 1 month.
For your cocktail, combine syrup, tequila (or tea/lemonade), and lime juice in a glass.
Add ice, top the mixture with sparkling water, mix well, and enjoy!
